Claiming is done on a chunk-basis, one chunk in Minecraft is 16x16 blocks. Your claim always extends from the bottom of the map to the limit of the sky. More information about chunks can be found on the Minecraft wiki here: Chunk
There's a lot you can do with land claiming, but let's start with the basics here.
Assuming you're a new player and have never claimed land before, this is what you do to protect your area:

To keep the world active and make room for new players, land claims are automatically removed if a player is offline for an extended period of time.
When a land owner becomes inactive, the system first checks their playtime on the Survival server. Based on that, a specific offline expiration time is used (see table below). If the land owner's claim expires:
Note: Only playtime on the Survival server counts — not time spent on other servers in the network.
This table shows how long a land owner must be offline before their land expires, based on their total playtime on the Survival server:
